Whether you’re baking for a summer hangout, late-night snack attack, or just want the best cookie recipe with marshmallows you’ve ever tried, this one delivers. Fast to make, ridiculously satisfying, and unapologetically nostalgic, these cookies are here to ruin basic chocolate chip cookies for you forever.

Recipe

1. Get Your Gear Ready

Preheat that oven to 180°C (375°F). Line a baking tray with baking paper unless you like scraping sugar cement off metal.

Optional prep flex: Chill your cookie dough balls later for extra thickness, but if you’re impatient (respect), skip it.

2. Sugars

  • 1 cup softened unsalted butter

  • ½ cup brown sugar

  • ¼ cup granulated sugar

Beat it. Literally. Cream until it’s smooth and slightly fluffy — this is the base of the chaos.

3. Crack In

  • 1 large egg + 1 yolk

  • 1 teaspoon vanilla extract

Mix until it all becomes one glorious goo. This is your flavour foundation. Don't skip the real vanilla unless you’re cool with regret.

4. Assemble!

In a separate bowl, whisk together:

  • 1¼ cups all-purpose flour

  • ½ teaspoon baking soda

  • 2 teaspoon Cream of Tartar (sub Baking Powder)

  • ½ teaspoon salt

Now slowly fold it into the wet mixture. Don’t dump it all in at once unless you want a flour bomb on your counter.

5. The Good Stuff

Time to stir in:

  • ¾ cup chocolate chips or chunks (dark, milk, chaos — your call)

  • 1½ cups Jet-Puffed Mini Marshmallows

  • Optional: ½ cup crushed graham crackers for the full s’mores experience

Pro move: Save a handful of marshmallows to press into the tops of each dough ball for maximum gooey exposure.

6. Scoop

Scoop dough into balls (roughly 2 tablespoons per cookie).
Place them on your tray with enough room to spread — these cookies need personal space.

Top each with a few extra marshmallows for drama. Do it. They melt into toasted art.

7. Bake

Bake for 9 to 11 minutes. Pull them when the edges are golden but the centres still look slightly underdone. Trust the process.

Let them sit on the tray for 5 minutes. That molten marshmallow needs a moment.
