Coconut Joy Cookies

Coconut Joy Cookies are a soft and chewy treat made with shredded sweetened coconut and dark chocolate chips. These cookies blend a buttery base with rich flavor and a hint of vanilla. I love them with a cup of tea or coffee, plus, this recipe uses simple ingredients you likely already have at home.

Ingredients

  • 2½ cups all-purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons cream of tartar

  • Heavy pinch of salt

  • 1 cup unsalted butter (softened to room temperature)

  • ½ cup brown sugar

  • ½ cup granulated sugar

  • 1 whole egg + 1 egg yolk

  • 2 teaspoons vanilla extract

  • 1½ cups sweetened shredded coconut

  • 1 cup dark chocolate chips

Instructions

1. Prep

  • Preheat oven to 175°C. (I like to go slightly hotter sometimes to 375F)

  • Line a baking tray with parchment paper.

2. Mix Dry Ingredients

  • In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt. Cream of Tartar is a replacement for Baking Powder.

3. Cream Butter & Sugars

  • In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes).

4. Add Eggs & Vanilla

  • Add the whole egg, then the yolk, beating well after each.

  • Mix in vanilla extract.

5. Combine Wet & Dry

  • Gradually add the dry ingredients to the wet mixture. Mix until just combined.

6. Add Coconut & Chocolate

  • Fold in shredded coconut and dark chocolate chips.

7. Scoop & Bake

  • Scoop dough into 2 tablespoon-sized balls and place on the prepared tray, spaced 5 cm apart.

  • Bake for 10–12 minutes, or until the edges are lightly golden.

8. Cool

  • Let cool on the tray for 5 minutes, then transfer to a wire rack.


Optional Add-Ins

Texture Additions

  • ½ cup chopped almonds or pecans

  • ⅓ cup rolled oats

Flavour Variations

  • 1 teaspoon almond extract (replacing 1 tsp of vanilla)

  • ¼ teaspoon cinnamon for warmth

Toppings & Finishes

  • Sprinkle flaky sea salt before baking

  • Drizzle with melted dark chocolate after cooling
