Coconut Joy Cookies
Coconut Joy Cookies are a soft and chewy treat made with shredded sweetened coconut and dark chocolate chips. These cookies blend a buttery base with rich flavor and a hint of vanilla. I love them with a cup of tea or coffee, plus, this recipe uses simple ingredients you likely already have at home.
Ingredients
2½ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
Heavy pinch of salt
1 cup unsalted butter (softened to room temperature)
½ cup brown sugar
½ cup granulated sugar
1 whole egg + 1 egg yolk
2 teaspoons vanilla extract
1½ cups sweetened shredded coconut
1 cup dark chocolate chips
Instructions
1. Prep
Preheat oven to 175°C. (I like to go slightly hotter sometimes to 375F)
Line a baking tray with parchment paper.
2. Mix Dry Ingredients
In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt. Cream of Tartar is a replacement for Baking Powder.
3. Cream Butter & Sugars
In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (2–3 minutes).
4. Add Eggs & Vanilla
Add the whole egg, then the yolk, beating well after each.
Mix in vanilla extract.
5. Combine Wet & Dry
Gradually add the dry ingredients to the wet mixture. Mix until just combined.
6. Add Coconut & Chocolate
Fold in shredded coconut and dark chocolate chips.
7. Scoop & Bake
Scoop dough into 2 tablespoon-sized balls and place on the prepared tray, spaced 5 cm apart.
Bake for 10–12 minutes, or until the edges are lightly golden.
8. Cool
Let cool on the tray for 5 minutes, then transfer to a wire rack.
Optional Add-Ins
Texture Additions
½ cup chopped almonds or pecans
⅓ cup rolled oats
Flavour Variations
1 teaspoon almond extract (replacing 1 tsp of vanilla)
¼ teaspoon cinnamon for warmth
Toppings & Finishes
Sprinkle flaky sea salt before baking
Drizzle with melted dark chocolate after cooling
